Pistachio White Chocolate Raspberry Mousse

INGREDIENTS

  • 1 egg yolk
  • 200g heavy cream
  • 85g Peppertux Farms Original Pistachio Butter
  • 85g melted white chocolate
  • 1 tea glass + 2 fingers worth of warm milk
  • Pistachio crumbs, for garnish
  • 1/4 cup frozen raspberries, sugar, lemon

INSTRUCTIONS

 Pistachio White Chocolate Mousse

  1. Whisk egg yolk and warm milk in a medium sized bowl.
  2. In a separate bowl, melt white chocolate
  3. Mix Peppertux Farms Original Pistachio Butter into melted chocolate.
  4. Add egg yolk and milk mixture into pistachio mixture. Whisk until well-combined.
  5. Use a stand mixer or hand mixer to whip heavy cream in a separate bowl.
  6. Add whipped cream to pistachio mixture and gently stir until well-combined.

Raspberry Base

  1. In the meantime, make the raspberry base by putting frozen/fresh raspberries in a medium saucepan and slowly cooking under low heat. Add in  sugar and lemon juice and simmer until it has thickened.

Assemble

  1. Pour in small glass containers and refrigerate. 
  2. Garnish with chopped pistachios, if desired.
